Iron Boosting Mango and Kale Smoothie

This would have to be my favourite smoothie for the past 12 months. I love a good smoothie for an afternoon snack to get me through the after school busyness. Kale is a great plant source of iron, but the taste of it is quite strong for most to tolerate. By pairing it with the sweetness of mango, it makes it a lot more palatable. Plus mango contains vitamin C which helps with the absorption of iron making it easier for your body to utilise the mineral. For even more nutrients, I have added in the contents of these dried beef liver and spleen powder capsules which is a fantastic source of iron (60% of the RDI to be exact) as well as folate, copper, Vitamin A, Vitamin B12 to assist with iron absorption


I like to keep bags of frozen mango on hand and I usually have some kale in my garden. Organic kale is best as leafy greens are usually heavily sprayed with pesticides. If you can get your hands on a bunch of organic kale, you can store any extra leaves in the freezer by tearing the leaves off the stems and placing them in a bag. You always have fresh kale on hand as you may not go through a whole bunch before it turns limp.

It is also a great smoothie for the kids to enjoy! Some will love the bright green colour and the sweetness of the mango.

Ingredients

1 cup of frozen mango

½ a cup of kale

1 heaped tbs of coconut yogurt

1 tsp of chia seeds

1 scoop of collagen powder of your choice. 

1 cup of coconut water

1 capsule Cell Squared Beef Liver and Spleen (opened)



Place all ingredients in a blender or smoothie maker. Blend until smooth

Pour into a tall glass and enjoy
